Cha-cha-cha-Chia!

So I made this chia pudding the other day and now I'm hooked. I had a few people ask me about it on IG so here I am. I wanted to post the recipe so all of my subscribers and others could enjoy.


Here's what you'll need:

- chia seeds (I prefer organic)

- dairy free milk ( I used unsweetened vanilla macadamia nut milk)

- sugar free sweetener ( I used liquid monk fruit)

- cinnamon (optional)

- fruit (optional)

- chocolate chips (also optional)


Here we go!





First, I added about 2 big tablespoons of chia seeds to a small mason jar. Then I added the milk and filled it up. I added 4 drops of liquid monk fruit, shook it up, and tossed it in the fridge. I went to bed and was so excited for it to set and couldn't wait to try it.


The next day around lunch time I took out half of the congealed pudding, added in some banana, dairy free gluten-free chocolate chips, and some whip cream. It was sooooo good I had it for a post lunch snack and a post dinner dessert as well. My daughter actually ate some too and really enjoyed it!


Chia seeds are a great source of fiber, they are naturally gluten free and dairy free, they are a low FODMAP food, and when combined with a liquid they form a gel that works as a binder to help move things along throughout the digestive tract. No wonder it's referred to as a super food.


I will be making this on the regular this week for sure. It's super easy and fun to change the toppings. I do recommend throwing it in the mason jar at night so the next day it's ready to go for breakfast or a snack or whatever. Hope you enjoy this post and the pudding :-)
